I was watching a TV cooking show last night about low-carb cooking. While the chef was bringing down the sugar calories by using Splenda, he was also using tons of fat , the bad kind (cream and butter). Now I don't mind an occasional delicious fattening dessert, but I don't fool myself into thinking of it as "healthy eating."
I wonder who the target population was. If the recipes were for people concerned about weight, they definitely were not low-calorie. If they were for diabetics ... well, the high fat in the cream and butter is not good for you either. People with diabetes must be very careful about the amount of fat eaten and maintain proper weight, blood pressure, and cholesterol. Cardiovascular disease is the number one killer for people with diabetes. It is the number one killer for a lot of people.
There is a difference between simple carbohydrates and complex carbohydrates. Simple sugars, like table sugar and sugar found in processed foods, digest quickly and nutritionally are useless. Complex carbs like whole grains, beans, and vegetables digest more slowly and are packed with nutrients.
The point is, just because something is touted as low-carb does not necessarily make it healthy. It doesn't mean you can't occasionally enjoy the dish, just be aware of what you are eating and use common sense.

I remember when the low-fat diets were popular, everyone was eating low-fat and fat-free foods and wondering why they weren't losing weight. It was because the manufacturers had upped the sugar. Then the low-carb rage began, and the manufacturers upped the fat to add flavor. The best solution is moderation in all things, and stay away from manufactured foods as much as possible.
